Recipe: Low Country Boil

This meal is one of the most requested meals in our house.  It feeds a lot of people and is delicious.

You can adjust the amount of sausage to feed more or add crab or other shellfish for a bigger feast.   


1/2 cup Old Bay Seasoning
2 tablespoons salt
4 quarts water
1 (12 ounce) can beer
8 medium red potatoes, cut in quarters
2 - 4 lbs. smoked sausage or kielbasa, cut in 2 inch lengths.  We frequently use turkey kielbasa.
8 ears corn on the cob
4 lbs. large shrimp, in shells (or other shellfish)

In an 8-quart stock pot, bring Old Bay, salt, water and beer to a boil. Add potatoes cook over high heat for 8 minutes. Add sausage and cook for 5 minutes.  Add corn to pot; continue to boil for 7 minutes. Add shrimp and cook for 4 minutes. Drain liquid; pour contents of pot into several large bowls. Sprinkle with additional Old Bay.
