Summer Bounty: Peach Jam

We visited the local orchard and brought home a basket of beautiful freestone peaches.  After eating large amounts of them for snacks, I made a few dozen jars of peach jam.  When winter comes, that taste of fresh peaches from summer is always welcome.

I love making simple jams since all they require is fruit, lemon juice, pectin and sugar.  Nothing fancy, no unknown ingredients and a taste that I've never found in store bought jam.

A quick search online will find recipes for fruit jams with a delicious array of additional ingredients from other fruits to herbs and alcohol.  Can you ever have too much jam?
